A new Mexican restaurant will open in the old Los Banditos building in Green Bay

GREEN BAY – A new Mexican restaurant is in the works for the Olde Main Street District.

Everardo and Maria Ortiz plan to bring authentic Mexican dishes to the old Los Banditos East building.

The building, 1258 Main St., has been empty since the restaurant closed in February 2018.

The Ortizes, owners of the Webster Avenue Taco Burrito Mexico site for 17 years, purchased the Los Banditos property in December.

“We just want to make it as lively as possible,” Maria Ortiz said of the new restaurant. “Something that can bring us and other people back to where we came from and our culture in Mexico.”

The new restaurant will be more dinner-oriented and formal than their current Taco Burrito Mexico, which largely focuses on take-out orders.

The couple plans to continue operating Taco Burrito Mexico in addition to taking on the new project. The West Mason and Shawano Taco Burrito Mexico locations are owned by Everardo’s brothers.

The new restaurant doesn’t have a name or hours yet, and Ortiz said they still don’t know what their menu will include, although she does know that everything on the menu will be traditional and authentic.

“We want to make really authentic plates,” Ortiz said.

Ortiz said they are working to get the building ready, which includes updating the floors and getting new kitchen equipment and furniture.

Most of the items they order will take months to arrive. With that in mind, the couple expects to open this summer. However, Ortiz said they plan to take their time and make sure they open in the best conditions.

“Like I tell my husband,” Ortiz said. “Let’s open it when we’re ready and don’t stress about a date.”
